As with other facilities we clean, we also look at the size and scope of the operation — how big is the dining room (front of house)? How big is the kitchen (back of house)? We consider the seating plan in the dining room — are there booths or tables only? Is it a hard floor or carpeted? Are the seats fabric or vinyl? We also review the kitchen environment — what kind of cooking occurs here? Is there a lot of frying? What kind of drainage mats are being used?

What this means is that our access to your facility is then limited to those non-operating hours which we must take into consideration when developing your cleaning plan.
